Corn and Palak Masala


We usually make palak paneer. Try this baby corn palak masala, a twist to palak paneer ! Vegan , healthy and tasty recipe !

Preparation time : 10 minutes

Cooking time : 20 minutes

Serves – 4 portions

Ingredients for palak paste

  • Palak – 2 bunches
  • Onion – 1 medium
  • Garlic cloves – 5-6
  • Cinnamon – ½ inch piece
  • Clove – 1 -2
  • Green chilli -1
  • Salt – ¼ tea spoon

Ingredients for the curry

  • Cooking oil – 3 spoons
  • Hing/Asafoetida – 1 generous pinch
  • Jeera – 1 tea spoon
  • Onion – 1 medium – finely chopped
  • Baby corn – 10-12 pieces – chopped into round pieces
  • Tomato – 1 large – finely chopped
  • Red chilli powder – ½ tea spoon
  • Garam masala – ¼ tea spoon (optional)
  • Kasuri Methi – 1 spoon
  • Salt – according to taste

Step 1: Blanch all the ingredients mentioned for palak paste for about 3-5 minutes in a pan. Let the mixture cool. Then make a fine paste of this mixture.

Step 2: In a cooking pan add oil. Once the oil becomes hot add hing, jeera. Once jeera splutters add onion.

Step 3: Once the onion becomes translucent add baby corn and saute well. Add salt and close the pan. Let baby corn cook for about 3-5 minutes.

Step 4: Add finely chopped tomatoes, red chilli powder and cook tomatoes well. Add the palak mixture and water as required.

Step 5: Lastly add garam masala and kasuri methi and let the mixture cook on low flame for about 5 minutes.

Step 6 : Corn and Palak masala is ready to devour on 🙂
