Bhindi Fry – Vegan


This is an easy to cook sabzi. This is healthy, tasty and very simple to make. I love bhindi and its health benefits are numerous. The uniqueness of this recipe is it gives a hint of tangy, sweet, bitter, salty and spice and gives it an amazing taste.

How to make?

Preparation time – 15 minutes

Cooking time – 35-40 minutes.

Serves –  3 portions.
Ingredients:
• Lady’s finger – washed, wiped well and diced – 300 gms
• Potato – 1 medium size diced
• Cooking oil – 2-3 spoon
• Asafoetida – a generous pinch
• Cumin seeds – ½ tea spoon
• Groundnut – 2-3 spoons
• Onion – 1 sliced
• Red chilli powder – ½ tea spoon
• Garam masala – ½ tea spoon
• Coriander powder – ½ teaspoon
• Dry Mango powder – ¼ tea spoon
• Kasuri methi – 1 spoon ( this gives a hint of bitter taste)
• Salt – ½ tea spoon

Step 1: Wash the ladies finger in water and salt. Wipe them in a kitchen cloth well to ensure that it cooks well and doesn’t become gooey. Dice them into medium sized pieces. Take a wok. Add lady’s finger , 1 spoon of cooking oil, ¼ tea spoon of salt and fry them till the ladies finger turns golden brown. Keep this in a low flame and saute them in-between. To turn golden brown it would take about 10 minutes.

Step 2: In a pan add oil , cumin seeds, asafoetida/hing and groundnuts. Once groundnut turns golden brown, add onion, potato  and ¼ tea spoon of salt and saute them. Cover the pan with a lid for about 2-3 minutes till the potato becomes soft. Saute this in between so that potato doesn’t stick to the pan.


Step 3: Add the dry masala powders and water and mix them all well. Ensure the water is evaporated before adding bhindi. Then add fried bhindi. Saute them together. Later add kasuri methi , salt if required (as we have already added before), sugar ½ tea spoon and mix well.


Step 4: Dry bhindi fry is ready to eat
