Dumroot Halwa


Not sure if all the readers have ate this lovely recipe. This dish is prepared in various ways and from white pumpkin mostly. However, there is a famous bakery named V.B. Bakery in Bangalore which makes this dish uniquely from sweet pumpkin. I have tried to replicate this. In case of any add-ons from the readers well accepted πŸ˜€

For the ingredients lets get started:

  • Semolina – thin variety (chirooti variety) – ΒΌ cup
  • Ghee – 3 spoons
  • Khova – ΒΌ cup (optional, can use milk powder instead)
  • Sweet pumpkin grated – 1 1/2 cup
  • Jaggery – ΒΌ cup
  • Sugar – ΒΌ cup
  • Elachi – 3-4 powdered
  • Raisins and nuts – as required J

 

Step 1: In a thick wok add 1 spoon ghee and roast the semolina until its golden brown

Step 2: In the same pan add remaining ghee and roast pumpkin till the pumpkin is almost cooked. Then add khova/milk powder and jaggery/sugar

Step 3: Add milk cream and roasted semolina and cook well. There would be an amzing binding between all the ingredients when you cook the mixture for about 2-3 minutes.

Step 4: Cook this mixture on a low flame until it becomes almost roasted. Alternatively this can be put on an oven once its cooked to roast it well either sides. However, I prefer cooking on a stove and hence put it on low flame for 10 mintutes each side. Close the pan with a lid and let the mixture cook on low flame.

Step 4: Add elachi powder and raisins and nuts

Step 5 : Eat well πŸ™‚
