Veg Pad Thai – Noodles

Pad Thai, phat Thai or phad Thai is a stir-fried rice noodle dish commonly served as a street food and at casual local eateries in Thailand. It is  normally a non veg variety which is served there. I have made an attempt to make it vegan with soaked dried rice noodles, which are stir-fried and flavored with tamarind pulp, garlic or shallots, red chili pepper and palm sugar, and served with lime wedges and often chopped roast peanuts.

  • Pad Thai Noodles
  • Thai paste
  • Veggies ( Carrot, Onion, French Beans, Cauliflower /Brocholi, Mushroom, Baby corn, Cabsicum, Spring onion and any other veggie of your choice)
  • Garlic – 4-5 cloves
  • Star anise and Cinnamon stick 1-2
  • Peanut – (Roasted and skin peeled off) 2 spoon


Step 1: Red thai paste for pad thai noodles:

Soak red chili for about 20 minutes in warm water. Make a paste of this along with coriander seeds, onion, garlic, lemon grass, cumin seeds). Cook this paste oil for about 15-20 minutes. Add tamarind pulp and salt to taste and cook this for about 5-10 minutes.

Alternatively you can buy Thai red paste and use it

Step 2: Making noodles 

Boil about 2 litres of water  along with a tea spoon of oil,  salt, star anise and cinnamon stick . Once the water comes to boiling point add pad thai noodles and cook it for about 2-3 minutes till the noodles becomes soft. Then immediately wash the noodles in cold water. Add a spoon of oil to the noodles so that they don’t stick to each other.

Step 3: Tossing the noodles

Take a vessel in which you want to toss the noodles. Add about 4-5 spoons of oil and once the oil is heated add onion, garlic and saute them for a minute or two. Then add a pinch of salt and other veggies one by one and cook them till they are cooked for about 60%. Cover the vessel with plate so that the veggies cook faster. Do not over cook the veggies as this would spoil the taste of the dish.

Add the red thai paste, peanuts and saute them for a minute or so. Finally add the noodles and toss them.
